Description

Blueberry Pie Overnight Oats is a delicious and healthy breakfast option that combines the flavors of blueberry pie with the convenience of overnight oats.


Ingredients

Scale
  • 2 cups Old Fashioned Rolled Oats
  • 1 1/2 cups Vanilla Yogurt
  • 2 cups Almond/Soy Milk
  • 4 tsp Cinnamon
  • 1 cup Blueberries
  • 1/4 cup Water
  • 1 tbsp Cornstarch
  • 1/4 cup Sugar
  • 1 tbsp Lemon Juice

Instructions

  1. Combine oats, yogurt, almond milk, and cinnamon. Mix well. Divide equally between 5 containers.
  2. In a saucepan, make the blueberry sauce by combining the blueberries, water, cornstarch, and sugar. Stir to combine.
  3. Continue stirring over medium heat until sauce starts to form. Reduce the heat to low and keep stirring frequently for a minute or two until a thick sauce forms.
  4. Remove from heat and stir in lemon juice.
  5. Once the sauce cools, distribute evenly between the containers. Seal and keep refrigerated.

Notes

  • These overnight oats can be prepared up to 5 days in advance.
  • Try adding nuts or seeds for added crunch.
  • Adjust the sweetness by adding more or less sugar to the blueberry sauce.
