Ingredients

  • ½ cup almond flour (or gluten-free flour)
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, whisk together cottage cheese, eggs, honey (or maple syrup), and vanilla until smooth. Stir in almond flour, baking powder, and cinnamon until fully combined.
  3. Fold in the blueberries gently to avoid crushing them.
  4. Pour the mixture into the prepared dish and bake for 30–35 minutes, or until golden on top and set in the center.
  5. Let it cool for a few minutes before slicing. Enjoy warm, or refrigerate for a quick grab-and-go breakfast!
