- 2 cups fresh blueberries
- 3 large eggs
- ½ cup almond flour (or gluten-free flour)
- ¼ cup honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
- In a large bowl, whisk together cottage cheese, eggs, honey (or maple syrup), and vanilla until smooth. Stir in almond flour, baking powder, and cinnamon until fully combined.
- Fold in the blueberries gently to avoid crushing them.
- Pour the mixture into the prepared dish and bake for 30–35 minutes, or until golden on top and set in the center.
- Let it cool for a few minutes before slicing. Enjoy warm, or refrigerate for a quick grab-and-go breakfast!
Notes
- Use fresh or frozen blueberries — no need to thaw if frozen.
- Add a sprinkle of oats or crushed almonds on top before baking for texture.
