1/2 cup granulated sugar - 3 cups fresh or frozen blueberries
- Crust Made With Graham Crackers
6 tablespoons melted butter - 2 tablespoons white sugar
- 1 1/2 cups finely crushed graham crackers
- Creamy Cheese Mixture
16 ounces (2 packs) cream cheese, softened - 1 teaspoon pure vanilla
- 1/2 cup granulated sugar
- 2 large eggs
Instructions
- In a small pot, mix blueberries with sugar. With the lid on, cook over low heat for 10 minutes. Let it cool and refrigerate for 1-2 hours to thicken.
- Turn oven to 350°F.
- Stir together graham crumbs, sugar, and melted butter. Press mixture into a greased baking dish (9×13 size).
- Blend softened cream cheese with sugar until smooth. Beat in eggs one by one and finish by mixing in the vanilla. Pour it over the crust evenly.
- Lay two thick lines of chilled blueberry sauce along the pan lengthwise. Use a skewer or chopstick to swirl it gently without touching the crust.
- Place in oven and bake for 40 to 45 minutes until it sets in the center.
- Once out of the oven, cool thoroughly before slicing into bars.
Notes
- For a thicker blueberry sauce, cook the mixture for a little longer.
- Chilling the sauce before adding it to the cheesecake helps create beautiful swirls.
- These bars can be served with whipped cream or vanilla ice cream for added richness.
