Description

A delicious dessert combining the salty crunch of pretzels with the sweetness of blackberries and creamy cheese.


Ingredients

  • 250 grams coarsely crushed pretzels
  • 135 grams light brown sugar
  • 15 grams all-purpose flour
  • 10 millilitres vanilla extract
  • 170 grams unsalted butter, melted
  • 450 grams fresh blackberries
  • 50 grams granulated sugar
  • 15 millilitres freshly squeezed lemon juice
  • 8 grams cornstarch
  • 225 grams full-fat cream cheese, at room temperature
  • 225 grams extra creamy whipped topping
  • 120 grams powdered sugar

Instructions

  1. Preheat oven to 190°C and lightly grease a 23×33 cm baking dish with non-stick spray.
  2. Using a food processor or sealed bag, crush pretzels to coarse pieces.
  3. In a large mixing bowl, combine crushed pretzels, brown sugar, flour, and vanilla extract. Stir thoroughly.
  4. Pour melted butter into pretzel mixture and mix until evenly moistened.
  5. Spread pretzel mixture into prepared baking dish, pressing into an even layer. Reserve 60 grams of the mixture for topping.
  6. Bake for 10 minutes, then remove from oven and allow crust to cool completely.
  7. Combine blackberries, granulated sugar, lemon juice, and cornstarch in a saucepan. Stir to integrate.
  8. Heat mixture over medium until berries release juices and thickened, about 6–8 minutes. Remove from heat and let cool.
  9. In a bowl, beat cream cheese with an electric mixer for 2–3 minutes until light and fluffy.
  10. Gradually add powdered sugar to cream cheese and beat until fully combined.
  11. Fold in whipped topping until mixture is smooth and uniform. Do not overmix.
  12. Once pretzel crust has fully cooled, spread cream cheese mixture evenly over the crust.
  13. Spoon cooled blackberry topping evenly over the cream cheese layer.
  14. Sprinkle reserved pretzel mixture across the surface.
  15. Cover with plastic wrap or foil and refrigerate for at least 4 hours or overnight before slicing.

Notes

  • For best results, allow the dessert to chill overnight.
  • Fresh blackberries can be substituted with other berries as desired.
