- 3 medium ripe peaches (sliced)
- 1 cup blackberries
- 1 avocado (chopped)
- 2 cups cooked farro
- 1/2 cup feta cheese
- Honey lime dressing (olive oil, lime juice, honey, red wine vinegar)
Instructions
- In a large bowl, combine arugula, cooked farro, sliced peaches, blackberries, avocado, feta cheese, and chopped pecans.
- In a separate bowl or jar, whisk together olive oil, lime juice, honey, red wine vinegar, minced shallot, garlic, salt, and pepper to make the dressing.
- Pour the dressing over the salad mixture and gently toss until everything is well coated. Serve immediately.
Notes
- Feel free to add nuts for crunch, such as toasted pecans or walnuts.
- Adjust the sweetness of the dressing according to your taste.
- For a vegan option, omit the feta cheese.
