Description

A flavorful and easy stir-fry featuring tender beef marinated in black pepper sauce, mixed with fresh green beans and mushrooms.


Ingredients

  • ¾ pound flank steak, trimmed and thinly sliced
  • 1 pound fresh green beans, ends trimmed and snapped into 23 inch pieces
  • 1 cup mushrooms, sliced (button or cremini)
  • 1 medium onion, thinly sliced
  • 2 slices fresh ginger, unpeeled
  • 3 tablespoons canola oil (divided)
  • ¼ cup water
  • Salt, to taste
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon rice vinegar or rice wine (or lime juice as a substitute)
  • 1 teaspoon sugar
  • 2 teaspoons coarse black pepper

Instructions

  1. Prepare the Ingredients: Snap green beans into 2–3 inch pieces, slice mushrooms and onion, and cut the flank steak into thin strips.
  2. Marinate the Beef: In a bowl, whisk together soy sauce, cornstarch, rice vinegar, sugar, and black pepper; add the beef slices and let marinate for 10–15 minutes.
  3. Cook the Green Beans: Heat 1 tablespoon of oil in a wok over high heat, add green beans and stir-fry for 1 minute, then steam with water for 6–8 minutes.
  4. Sauté the Aromatics, Mushrooms & Onion: Increase heat, add oil, sauté ginger for 30 seconds, add onion and mushrooms, and cook until softened.
  5. Stir-Fry the Beef: Add remaining oil, then marinated beef, and cook until browned.
  6. Combine and Finish: Return green beans, mushrooms, and onions to the pan, stir-fry for 1–2 minutes, taste, and adjust seasoning.
  7. Serve: Serve hot over jasmine rice or noodles, garnished as desired.

Notes

  • For tender beef, slice against the grain as thinly as possible.
  • Add sesame oil or red pepper flakes for extra flavor.
  • Vegetarian option: replace beef with tofu or tempeh.
