- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 celery stalk, diced
- 2 (15-ounce) cans black beans, drained and rinsed
- 1 (14-ounce) can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of cayenne pepper, optional
- Chopped fresh cilantro, optional
- Sour cream or vegan yogurt, optional
- Sliced avocado, optional
- Lime wedges, optional
- Diced red onion, optional
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, and celery. Sauté for 5 minutes until vegetables begin to soften.
- Add minced garlic to the pot and cook for 1 minute until fragrant.
- Stir in cumin, smoked paprika, chili powder, oregano, coriander, salt, black pepper, and cayenne if using. Cook for 1 minute to release aromatic compounds.
- Add drained black beans, diced tomatoes with juices, and vegetable broth. Stir thoroughly to combine all ingredients.
- Bring mixture to a boil, then reduce heat and simmer uncovered for 25 minutes, stirring occasionally.
- Use an immersion blender to partially puree the soup, leaving some beans and vegetables intact for texture. Alternatively, transfer half the soup to a blender, blend until smooth, and return to the pot.
- Taste the soup and adjust salt, pepper, and spices as needed.
- Ladle into bowls and top with desired garnishes: cilantro, sour cream, avocado, lime wedges, or red onion.
Notes
- For a spicier soup, add more cayenne pepper.
- This soup can be stored in the refrigerator for up to 5 days.
