Description

Delicious and light treats made with puff pastry and filled with a creamy cheese and blueberry mixture.


Ingredients

  • 1 sheet puff pastry, defrosted
  • 113 g cream cheese, room temperature
  • 60 g powdered sugar
  • 1 teaspoon vanilla extract
  • 150 g fresh blueberries
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 egg
  • 1 tablespoon milk
  • Powdered sugar, for sprinkling (if desired)

Instructions

  1. Preheat your oven to 200°C and line your baking tray with parchment paper.
  2. In a bowl, mix the cream cheese with powdered sugar and vanilla until smooth, then set aside.
  3. In another bowl, combine the blueberries with cornstarch and lemon juice until well coated.
  4. Flour your counter and roll out the pastry to about 30×40 cm, then cut it into 8 pieces, each about 10×15 cm.
  5. Place a spoonful of the cream cheese mixture in the center of each pastry piece and add some blueberry mixture on top.
  6. Fold the edges of the pastry over the filling to create packets and press the edges to seal.
  7. In a small bowl, mix the egg and milk, then brush this mixture over the pastries.
  8. Bake the pastries on the tray for about 15-18 minutes until they are puffed and golden.
  9. Transfer the pastries to a wire rack to cool and sprinkle with powdered sugar before serving if desired.

Notes

  • Ensure the puff pastry is adequately thawed before use.
  • Feel free to substitute the blueberries with other berries like raspberries or strawberries if preferred.
