Delicious and light treats made with puff pastry and filled with a creamy cheese and blueberry mixture.
Ingredients

- 1 sheet puff pastry, defrosted
- 113 g cream cheese, room temperature
- 60 g powdered sugar
- 1 teaspoon vanilla extract
- 150 g fresh blueberries
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 egg
- 1 tablespoon milk
- Powdered sugar, for sprinkling (if desired)
Instructions
- Preheat your oven to 200°C and line your baking tray with parchment paper.
- In a bowl, mix the cream cheese with powdered sugar and vanilla until smooth, then set aside.
- In another bowl, combine the blueberries with cornstarch and lemon juice until well coated.
- Flour your counter and roll out the pastry to about 30×40 cm, then cut it into 8 pieces, each about 10×15 cm.
- Place a spoonful of the cream cheese mixture in the center of each pastry piece and add some blueberry mixture on top.
- Fold the edges of the pastry over the filling to create packets and press the edges to seal.
- In a small bowl, mix the egg and milk, then brush this mixture over the pastries.
- Bake the pastries on the tray for about 15-18 minutes until they are puffed and golden.
- Transfer the pastries to a wire rack to cool and sprinkle with powdered sugar before serving if desired.
Notes
- Ensure the puff pastry is adequately thawed before use.
- Feel free to substitute the blueberries with other berries like raspberries or strawberries if preferred.
