Ingredients

- 3 medium beets, roasted, peeled, and sliced into wedges
- 3 oranges, peeled and segmented
- 1/2 cup crumbled feta cheese
- 1/4 cup shelled pistachios
- Fresh mint leaves, for garnish
- Salt and freshly ground black pepper, to taste
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard

Instructions
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Set aside.
- Arrange beet wedges and orange segments on a large serving platter.
- Sprinkle crumbled feta cheese over the beets and oranges.
- Scatter pistachios across the salad.
- Drizzle the prepared dressing evenly over the salad.
- Garnish with fresh mint leaves.
- Season with additional salt and pepper if needed. Serve immediately.
