- 2 pounds boneless, skinless chicken thighs
- 1 cup barbecue sauce
- 1 cup coleslaw mix (cabbage and carrots)
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- Salt to taste
- Black pepper to taste
- 8 slider buns
Instructions
- Place chicken thighs in a slow cooker and pour barbecue sauce over them. Cook on low for 4-5 hours or high for 2-3 hours, until the chicken is tender and easily shreds.
- In a mixing bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Stir thoroughly and refrigerate until needed.
- When cooked, use two forks to shred the chicken in the slow cooker, mixing it well with the barbecue sauce.
- Fill each slider bun with a generous portion of BBQ chicken and top with coleslaw. Serve immediately.
