Description

BBQ Chicken Sliders with Tangy Coleslaw are delicious sandwiches featuring tender shredded chicken smothered in BBQ sauce and topped with a refreshing coleslaw.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup barbecue sauce
  • 1 cup coleslaw mix (cabbage and carrots)
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt to taste
  • Black pepper to taste
  • 8 slider buns

Instructions

  1. Place chicken thighs in a slow cooker and pour barbecue sauce over them. Cook on low for 4-5 hours or high for 2-3 hours, until the chicken is tender and easily shreds.
  2. In a mixing bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Stir thoroughly and refrigerate until needed.
  3. When cooked, use two forks to shred the chicken in the slow cooker, mixing it well with the barbecue sauce.
  4. Fill each slider bun with a generous portion of BBQ chicken and top with coleslaw. Serve immediately.
