Bang-Bang Melty Bacon Cheddar Stuffed Meatloaf Bombs are irresistible meatballs filled with bacon and cheddar cheese, glazed with barbecue sauce.

- 2 lbs ground beef
- 1 cup breadcrumbs
- 2 eggs
- 1/2 cup barbecue sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 8 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup barbecue sauce (for glazing)
Instructions
- Preheat your oven to 375°F.
- In a large bowl, mix together the ground beef, breadcrumbs, eggs, 1/2 cup barbecue sauce, garlic powder, onion powder, salt, and pepper until well combined.
- Take a small amount of the meat mixture and flatten it in your hand.
- Add a spoonful of crumbled bacon and shredded cheddar cheese in the center, then wrap the meat around the filling to form a ball.
- Repeat with the remaining meat mixture.
- Place the meatloaf bombs on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes or until fully cooked.
- Brush the meatloaf bombs with the remaining 1/2 cup barbecue sauce and bake for an additional 5 minutes.
- Serve hot and enjoy the melty bacon cheddar stuffed goodness!

- Ensure the ground beef is fully cooked before removing from the oven.
