- 2 ripe bananas, mashed
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1 cup whole milk
- 2 large eggs
- 4 tbsp unsalted butter, melted
- 1/4 cup brown sugar
- 1/2 cup heavy cream (for caramel topping)
- 1/2 cup granulated sugar (for caramel topping)
- 1 tsp vanilla extract
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, mash the bananas until smooth but still slightly chunky for texture.
- Add the flour, baking powder, brown sugar, eggs, melted butter, milk, and vanilla extract to the mashed bananas. Mix gently until just combined.
- Lightly grease the preheated waffle iron and pour in the batter. Cook until golden brown, about 5 minutes.
- For the caramel sauce: In a saucepan over medium heat, combine granulated sugar and heavy cream. Stir continuously until it bubbles and thickens slightly (about 5 minutes).
- Plate the waffles and generously drizzle with warm caramel sauce.
Notes
- Make sure the bananas are ripe for the best sweetness.
- You can adjust the thickness of the caramel sauce by cooking it longer if desired.
