- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 4 ripe bananas, mashed
- ¾ cup granulated sugar
- 1 large egg, lightly beaten
- 1/3 cup unsalted butter, melted
- 1 cup chocolate chips
- For the Streusel Topping:
- 1/3 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1/8 teaspoon ground cinnamon
- 1 tablespoon unsalted butter
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with butter.
- In a large bowl, whisk together the flour, baking soda, and salt.
- In another bowl, mix the mashed bananas, sugar, egg, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients. Stir until just combined. Fold in the chocolate chips.
- In a small bowl, mix together brown sugar, flour, and cinnamon. Cut in the butter until the mixture resembles coarse crumbs.
- Fill the prepared muffin cups 3/4 full with the batter. Sprinkle the streusel topping evenly over each muffin.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
