Description

Delicious and moist banana chocolate chip muffins topped with a crumbly streusel.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 4 ripe bananas, mashed
  • ¾ cup granulated sugar
  • 1 large egg, lightly beaten
  • 1/3 cup unsalted butter, melted
  • 1 cup chocolate chips
  • For the Streusel Topping:
  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with butter.
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, mix the mashed bananas, sugar, egg, and melted butter until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Fold in the chocolate chips.
  5. In a small bowl, mix together brown sugar, flour, and cinnamon. Cut in the butter until the mixture resembles coarse crumbs.
  6. Fill the prepared muffin cups 3/4 full with the batter. Sprinkle the streusel topping evenly over each muffin.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
