Description

Delicious mini muffins combining ripe banana and chocolate chips that everyone will love!


Ingredients

Scale
  • 1 large ripe banana
  • 170 grams Pioneer Sweet Cream Baking Mix
  • 180 millilitres water
  • 100 grams miniature chocolate chips, plus extra for topping

Instructions

  1. Preheat oven to 190°C.
  2. In a medium mixing bowl, thoroughly mash the banana until smooth. Add the baking mix, water, and most of the chocolate chips. Stir until just combined; do not overmix.
  3. Evenly portion batter into a mini muffin tin, filling each cavity about 3/4 full. Sprinkle a few additional chocolate chips on top of each muffin.
  4. Bake in the preheated oven for approximately 15 minutes or until a toothpick inserted comes out clean and tops are golden.
  5. Remove from oven and allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
  6. Let muffins cool completely before serving or storing.
