Description

Delicious baked chocolate donuts topped with fresh raspberries and optional chocolate glaze, perfect for a sweet treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup whole milk (or buttermilk for extra richness)
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup fresh raspberries (or frozen, thawed and drained)
  • 1/2 cup semi-sweet chocolate chips (optional for glaze)
  • 2 tbsp heavy cream (optional for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a donut pan or spray it with non-stick spray.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, whisk together the granulated sugar, brown sugar, milk, melted butter, egg, and vanilla extract until smooth and combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix the batter.
  5. Gently fold the fresh raspberries into the batter, being careful not to crush them. If using frozen raspberries, ensure they are well-drained and folded in gently.
  6. Spoon the batter into the donut pan, filling each cavity about 2/3 full. You can also use a piping bag for a cleaner fill.
  7. Bake for 10-12 minutes, or until a toothpick inserted into the center of a donut comes out clean. Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  8. While the donuts are cooling, make the glaze by melting the chocolate chips and heavy cream together in a microwave-safe bowl. Heat in 30-second intervals, stirring after each, until the chocolate is fully melted and smooth.
  9. Once the donuts are completely cooled, dip the top of each donut into the chocolate glaze, then return them to the wire rack to allow the glaze to set.
  10. Serve these delicious baked chocolate donuts with fresh raspberries on the side, or enjoy them on their own with a cup of coffee or tea!
