- 4 medium chicken breasts
- 2 teaspoons olive oil
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup pickled pepper rings
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded pepper jack cheese
- Finely chopped parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a 9 x 13 inch baking dish with olive oil or cooking spray.
- Place chicken breasts in the prepared dish. Drizzle with olive oil and season both sides with salt, paprika, black pepper, garlic powder, and Italian seasoning.
- Arrange pickled pepper rings over the chicken. Evenly distribute shredded mozzarella and pepper jack cheese on top.
- Bake uncovered for 20 to 25 minutes, until chicken reaches an internal temperature of 165°F (74°C) and cheese is melted and golden.
- Remove from oven. Garnish with finely chopped parsley and serve immediately.
