Ingredients

  • 2 teaspoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup pickled pepper rings
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded pepper jack cheese
  • Finely chopped parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a 9 x 13 inch baking dish with olive oil or cooking spray.
  2. Place chicken breasts in the prepared dish. Drizzle with olive oil and season both sides with salt, paprika, black pepper, garlic powder, and Italian seasoning.
  3. Arrange pickled pepper rings over the chicken. Evenly distribute shredded mozzarella and pepper jack cheese on top.
  4. Bake uncovered for 20 to 25 minutes, until chicken reaches an internal temperature of 165°F (74°C) and cheese is melted and golden.
  5. Remove from oven. Garnish with finely chopped parsley and serve immediately.
