- 8 ounces cream cheese, softened
 - 1 cup shredded cheddar cheese
 - 6 slices bacon, cooked and crumbled
 - 4 to 5 fresh jalapeños, seeds removed and finely chopped
 - 15 eggroll wrappers
 - Vegetable oil, for frying
 
Instructions
- In a large mixing bowl, blend softened cream cheese with shredded cheddar cheese until smooth. Add crumbled bacon and finely chopped jalapeños, then season with salt and pepper to taste. Mix thoroughly to combine all ingredients.
 - Place an eggroll wrapper on a clean surface. Spoon approximately 2 tablespoons of the filling onto the center of the wrapper. Lightly moisten the edges with water. Fold the bottom corner over the filling, fold in both sides, and roll tightly to enclose the filling.
 - Pour vegetable oil into a heavy skillet to a depth of about 1 inch. Heat the oil over medium-high heat until it reaches 350°F.
 - Working in batches, fry the assembled eggrolls for 2 to 3 minutes per side or until the wrappers are golden brown and crisp. Transfer to a paper towel-lined plate to drain excess oil.
