Description

Bacon Egg Cheese Quesadillas are a quick and delicious meal, featuring crispy bacon, fluffy eggs, and melted cheese all wrapped in a warm tortilla.


Ingredients

  • 2 slices thick-cut bacon
  • 2 large eggs
  • 1/8 teaspoon salt
  • Pinch of black pepper
  • 1 tablespoon unsalted butter
  • 1 large burrito-size flour tortilla
  • 1/3 cup shredded cheese, Mexican cheese blend or medium cheddar

Instructions

  1. Heat a medium non-stick skillet over medium heat. Cook bacon slices until crisp. Transfer to a paper towel–lined plate and allow to cool. Chop bacon into bite-sized pieces and set aside.
  2. Wipe out the pan with paper towels. In a small bowl, whisk eggs until uniformly pale yellow. Season with salt and black pepper.
  3. Return the skillet to medium heat and add butter, allowing it to melt and coat the pan. Pour in the whisked eggs and cook undisturbed for about 1 minute.
  4. Sprinkle half of the shredded cheese evenly over the eggs. Place the flour tortilla directly on top of the eggs and cheese, pressing gently. Continue cooking for an additional minute.
  5. Carefully flip the tortilla so the eggs are now on top. Sprinkle the remaining cheese and the chopped bacon evenly over the eggs.
  6. Fold the tortilla in half to enclose the filling. Cook until the cheese is melted and both sides of the quesadilla are golden brown.
  7. Transfer to a cutting board, slice into triangles, and serve immediately.

Notes

  • For extra flavor, you can add diced onions or bell peppers before adding the eggs.
  • Feel free to substitute the cheese for your favorite variety.
  • These quesadillas can be served with salsa or avocado for dipping.
