Description
Bacon Egg Cheese Quesadillas are a quick and delicious meal, featuring crispy bacon, fluffy eggs, and melted cheese all wrapped in a warm tortilla.

- 2 slices thick-cut bacon
- 2 large eggs
- 1/8 teaspoon salt
- Pinch of black pepper
- 1 tablespoon unsalted butter
- 1 large burrito-size flour tortilla
- 1/3 cup shredded cheese, Mexican cheese blend or medium cheddar
Instructions
- Heat a medium non-stick skillet over medium heat. Cook bacon slices until crisp. Transfer to a paper towel–lined plate and allow to cool. Chop bacon into bite-sized pieces and set aside.
- Wipe out the pan with paper towels. In a small bowl, whisk eggs until uniformly pale yellow. Season with salt and black pepper.
- Return the skillet to medium heat and add butter, allowing it to melt and coat the pan. Pour in the whisked eggs and cook undisturbed for about 1 minute.
- Sprinkle half of the shredded cheese evenly over the eggs. Place the flour tortilla directly on top of the eggs and cheese, pressing gently. Continue cooking for an additional minute.
- Carefully flip the tortilla so the eggs are now on top. Sprinkle the remaining cheese and the chopped bacon evenly over the eggs.
- Fold the tortilla in half to enclose the filling. Cook until the cheese is melted and both sides of the quesadilla are golden brown.
- Transfer to a cutting board, slice into triangles, and serve immediately.
Notes
- For extra flavor, you can add diced onions or bell peppers before adding the eggs.
- Feel free to substitute the cheese for your favorite variety.
- These quesadillas can be served with salsa or avocado for dipping.
