Description

Apricot Pineapple Jam is a delectable homemade preserve combining the sweet flavors of apricots and pineapple, perfect for spreading on toast or using in desserts.


Ingredients

  • 6 cups apricots (about 3 pounds), measured after chopping or crushing
  • 2 cups fresh pineapple, measured after chopping finely
  • 9 cups granulated sugar
  • 2 boxes pectin
  • ¼ cup lemon juice
  • ½1 teaspoon almond extract

Instructions

  1. Prepare mason jars and lids by washing and sterilizing in boiling water or running through the sterilization cycle on the dishwasher.
  2. Prepare the apricots and pineapple. Remove pits from the apricots and chop into small pieces. Cut the flesh of the pineapple into small pieces. Crockpot jam cooks best the smaller the pieces are broken down beforehand.
  3. Add sugar, pectin, apricots, and pineapple to the crockpot.
  4. Set the crockpot on high and cook for 2-3 hours, stirring every 30 minutes or so.
  5. When the sugar is completely dissolved throughout the entire mixture, the jam is done.
  6. Add almond extract.
  7. Use an immersion blender to break down jam to your desired consistency.
  8. Ladle jam into prepared jars, secure lids, and leave the jars to set for 24 hours before storing in the freezer.
  9. If you’d like to process the jars in a boiling water bath instead of freezing, they can be stored on the shelf for up to 1 year.
