Description

Apple Spiced Stuffed Sweet Potatoes are a cozy and delicious treat, perfect for fall, combining sweet potatoes with spiced apples, pecans, and cranberries.


Ingredients

  • 4 medium sweet potatoes
  • 2 apples (Honeycrisp or Granny Smith), peeled and diced
  • 2 tablespoons unsalted butter
  • 1 tablespoon pure maple syrup
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¼ cup chopped pecans
  • 2 tablespoons dried cranberries
  • Plain Greek yogurt or whipped cream (optional)

Instructions

  1. Preheat the oven to 400°F. Pierce each sweet potato several times with a fork and arrange on a baking sheet. Roast for 45 to 55 minutes until tender.
  2. In a skillet, melt butter over medium heat. Add diced apples and cook until softened, about 5 minutes.
  3. Stir in maple syrup, cinnamon, nutmeg, cloves, and salt. Cook for an additional 2 minutes, stirring occasionally.
  4. Slice roasted sweet potatoes lengthwise and fluff the flesh with a fork. Spoon the warm spiced apple mixture evenly into each potato cavity.
  5. Sprinkle pecans and dried cranberries on top.
  6. Serve warm, optionally topped with plain Greek yogurt or whipped cream.
