- 4 medium sweet potatoes
- 2 apples (Honeycrisp or Granny Smith), peeled and diced
- 2 tablespoons unsalted butter
- 1 tablespoon pure maple syrup
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ⅛ teaspoon ground cloves
- ¼ teaspoon salt
- ¼ cup chopped pecans
- 2 tablespoons dried cranberries
- Plain Greek yogurt or whipped cream (optional)
Instructions
- Preheat the oven to 400°F. Pierce each sweet potato several times with a fork and arrange on a baking sheet. Roast for 45 to 55 minutes until tender.
- In a skillet, melt butter over medium heat. Add diced apples and cook until softened, about 5 minutes.
- Stir in maple syrup, cinnamon, nutmeg, cloves, and salt. Cook for an additional 2 minutes, stirring occasionally.
- Slice roasted sweet potatoes lengthwise and fluff the flesh with a fork. Spoon the warm spiced apple mixture evenly into each potato cavity.
- Sprinkle pecans and dried cranberries on top.
- Serve warm, optionally topped with plain Greek yogurt or whipped cream.
