Description

  • 1 medium onion, finely chopped
  • 1 small red bell pepper, diced
  • 3 cups frozen shredded hash browns, thawed
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Swiss cheese
  • 1.5 cups whole milk
  • 8 large eggs
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon paprika
  • 2 tablespoons chopped fresh parsley, optional for garnish

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Heat a large skillet over medium heat. Add sausage, breaking apart with a spoon, and cook until browned throughout, approximately 6-8 minutes. Transfer to paper towels to drain excess fat.
  3. Return the skillet to medium heat. Add chopped onion and diced red bell pepper, and cook for 3-4 minutes until vegetables soften. Remove from heat.
  4. In a large mixing bowl, whisk together eggs, milk, salt, black pepper, garlic powder, and paprika until fully incorporated.
  5. Add hash browns, cooked sausage mixture, cheddar cheese, and Swiss cheese to the egg mixture. Stir thoroughly until evenly distributed.
  6. Pour the combined mixture into the prepared baking dish and spread evenly with a spatula.
  7. Bake for 40-45 minutes until the center is set and the top is golden brown.
  8. Allow casserole to rest for 10 minutes. Slice into portions and garnish with fresh parsley if desired.
